Heirloom Corn

We have painstakingly procured the best indigenous heirloom corn, ancient varietals cultivated for generations by small-scale farming families. These native seeds preserve remarkable flavor, agricultural biodiversity, and a cultural heritage that deserves to be celebrated and protected.

Honor & Preserve Nixtamalization

For thousands of years, nixtamalization has transformed simple corn into one of the world's great foods. We honor that tradition by slowly cooking whole corn with limestone (cal), resting, and stone-grinding it into fresh masa. Every batch helps preserve an ancient craft while supporting the farmers and food traditions that continue to keep it alive.

Stone-Ground

We believe great food can’t be rushed. That’s why every batch of nixtamal is rested, stone-ground, preservative-free and minimally processed (containing only heirloom corn, cal, & water). We choose craftsmanship over shortcuts because consumers deserve an exceptional product.
